Red Rubies in Coconut Milk



Red Rubies in Coconut Milk. It is popular Thai dessert. Easy to make and so delicious

Ingredients:              
  • 1 (8-ounce) can chestnuts in the water/fresh, peeled and sliced
  • 1/2 cup tapioca flour
  • 2 pandan leaves
  • 6 drops red food coloring
  • 1 cup coconut milk
  • 1/3  cup sugar
  • 1/2 teaspoon salt
  • 1/2 cup water
  • coconut jely with jackfruit in syrup (optional)    reed more 


Cooking Method:
  1. In a bowl add chestnuts
  2. Add food coloring, and a little bit of water. Mix well and leave it sit for 5 minutes
  3. After 5 minutes drain liquid
  4. In another bowl add tapioco flour then add the chestnuts to it. Mix well
  5. pour the chestnuts into a strainer and shack off excess flour
  6. In a pan bring water to a boil
  7. Add chestnut into the boiling water and bring it back to a boil.
  8. When the rubies start to float remove to cold water
  9. In a new pan on medium heat add coconut milk add water, pandan leaves, sugar, and salt. Mix well and being to a boil
  10. After boiling turn off the heat set aside
  11. In a bowl add the coconut milk and some red rubies.
  12. Add coconut jelly with jackfruit to the bowl (optional)
  13. It is done. Also you can add some ice cubes if you want. Enjoy!!
