Red Rubies in Coconut Milk
Red Rubies in Coconut Milk. It is popular Thai dessert. Easy to make and so delicious
Ingredients:
- 1 (8-ounce) can chestnuts in the water/fresh, peeled and sliced
- 1/2 cup tapioca flour
- 2 pandan leaves
- 6 drops red food coloring
- 1 cup coconut milk
- 1/3 cup sugar
- 1/2 teaspoon salt
- 1/2 cup water
- coconut jely with jackfruit in syrup (optional) reed more
Cooking Method:
- In a bowl add chestnuts
- Add food coloring, and a little bit of water. Mix well and leave it sit for 5 minutes
- After 5 minutes drain liquid
- In another bowl add tapioco flour then add the chestnuts to it. Mix well
- pour the chestnuts into a strainer and shack off excess flour
- In a pan bring water to a boil
- Add chestnut into the boiling water and bring it back to a boil.
- When the rubies start to float remove to cold water
- In a new pan on medium heat add coconut milk add water, pandan leaves, sugar, and salt. Mix well and being to a boil
- After boiling turn off the heat set aside
- In a bowl add the coconut milk and some red rubies.
- Add coconut jelly with jackfruit to the bowl (optional)
- It is done. Also you can add some ice cubes if you want. Enjoy!!
